Reset to Default
To remove KMS from a server you need to reset the license key back to the default, this is achieved by running the following command;
cscript c:\windows\system32\slmgr.vbs –upk cscript c:\windows\system32\slmgr.vbs /ipk <license key goes here>

So to reset the license key for a Vista client you would run this command;
cscript c:\windows\system32\slmgr.vbs /ipk YFKBB-PQJJV-G996G-VWGXY-2V3X8 cscript c:\windows\system32\slmgr.vbs -ato
